Ingredients
Serves 4
1 chicken (14 pounds) cut into pieces
1 cup butter milk
2 cups all  purpose flour for coating
1 teaspoon paprika
salt and pepper
2 quarts vegetable oil for frying

Method
Take your cut up chicken pieces and skin them if you prefer .Put the flour in a large plastic bag (let the amount of chicken you are cooking dictate the amount of flour you  use ) .Season the flour with paprika , salt and pepper to taste .Paprika helps to brown the chicken .

Dip chicken pieces in butter milk then , a few at a time , put them in the bag with the flour , seal the bag and shake to coat well .Place the coated chicken on a cookie sheet or tray and cover with a clean dish towel or waxed paper . Let sit until the flours is of a paste - like consistency , this is crucial !

Fill a large skillet (cast iron is best) about 1/3 to 1/2 full with vegetable oil . Heat until very hot .Put in as many chicken pieces as the skillet can hold .Brown the chicken in hot oil on both sides when browned ,reduce heat and cover skillet ; let cook for 30 minutes ( the chicken will be cooked through but not crispy ). Remove cover , raise heat again and continue to fry until crispy .

Drain the fried chicken on paper towels . Depending on how much chicken you have , you may have to try in a few shifts .Keep the finished chicken in a slightly warm oven while preparing the rest .

Baked Chicken Spring Rolls

Ingredients
Serves 5
1 package refrigerated crescent rolls
1 package cream cheese with chives , softened
2 tbsp butter
1 cup shredded cooked chicken
3/4 cup sliced fresh mushrooms
1/2 tbsp lemon pepper
2 tbsp butter ,melted
3 cups seasonal croutons , crushed
1/3 cup dripping from a roast chicken
1 tbsp minced, onion
1/2 lemon juice
1 cup chicken stock
salt and ground black pepper ,to taste

Method
1. Preheat an oven to 175 degrees C .Roll out and separate the crescent roll dough on a large baking sheet .

2. Mix together the cream cheese and butter in a bowl until well blended .Stir in the shredded chicken , mushrooms and lemon pepper .Fill the crescent rolls with a tablespoonful of the chicken mixture .Roll each piece up beginning with the wide end ; press and seal the top of the rolled dough .Brush the rolls with butter ,then roll them in the crushed croutons .Return the coated rolls back to the baking sheet.

3 . Bake in the preheated oven until golden brown about 20 minutes .

4 .. Heat the drippings in a large skillet over medium high heat . Stir in the onion and juice , cook and stir about 5 minutes . Pour in 1 cup of chicken stock and continue to cook and stir until the sauce has reduced by half about 15 minutes .Reduce heat to low .Mix the cornstarch and remaining 3 tablespoons of chicken stock in a small bowl .Stir the cornstarch mixture into the skillet until thickened about 5 minutes .Season with salt and pepper .

5 .Spoon the hot gravy over the chicken rolls before serving .

Special Chicken biryani

            Making a good chicken biryani is just very simple and this recipe is perfect for a home preparation .This is easier then any dum biryani since it needs no sauteing of spices or meat .Just mix all the ingredients and cook on a slow dum process ,trapping the steam to retain the aroma .
            To get an authentic flavor and taste , do use all the mentioned ingredients and if desired can substitute ghee for oil .
 
Ingredients
Serves 512/2 tsp fresh ginger ,chopped
11/2 crushed fresh garlic
1 tsp chilly powder
11/2 tsp green turmeric
2 tsp salt
5 cardamom pods , crushed
300 ml plain yogurt
1-5 chicken , cut into pieces
150 ml milk 
1 tsp saffron threads 
6 tsp ghee
2 onions,sliced
450 g Basmati rice
2 cinnamon sticks 
4 black peppercorns
1 tsp black cumin seeds 
4 fresh green chillies
4 tbsp lemon juice 
2-3 tbsp finely chopped fresh coriander leaves

Method
1 . Blend the ginger , garlic , chilly powder , turmeric half the salt and the cardamoms together in a bowl .Add the yogurt and chicken pieces and mix well .Cover and marinate in a refrigerator for 3 hours .

2. Boil the milk in a small saucepan ,pour over the saffrons and set aside .

3 .Heat the ghee in a large saucepan .Add the onions and cook until golden.Transfer half of the onions and ghee to a bowl and set aside.

4 .Place the rice , cinnamon sticks ,peppercorns and black cumin seeds in a saucepan of water .Bring to the boil and remove from the heat when the rice is half cooked .Drain the place in a bowl .Mix with the remaining salt .

5 . Chopped the chillies and set aside .Add the chicken mixture to the pan containing the onions .Add half each of the chopped green chillies , lemon juice , coriander and saffron milk .

6 . Add the rice ,then the rest of ingredients ,including the reserved onions and ghee .Cover tightly and cook over low heat for 1 hour .Cheek that the meat is cooked through ,if it is not cooked return to the heat .Mix well before serving .

Make your biryani taste better:
Use fresh ingredients - onions , ginger , garlic , green chillies ,cilantro, mint and curry leaves .

Marinate the chicken overnight in the refrigerator so that all the flavors will get into it.

Shallow fry the marinated chicken/meat before combining it with the masala.

When you cook the rice , add whole cardamons , cloves , cinnamon , bay leaves , cumin seeds along with the rice .
 

Spanish Chicken Paella

            Paella is a great idea for party ,you can make coats really easily and it looks very impressive .Not just for sunshine days ,this Spanish winter paella is easy and also perfect for a quick and close .
         Enjoy this Superb -Spanish paella with friend and family - a combination of sweet prawns and saffron sticky rice .

Ingredients 
Serves 4-5                                                                        
1 tsp saffron threads
2 tbsp hot water
1 tbsp olive oil
1/2 tsp paprika 
1/2 tsp cayenne pepper
150 g chicken breasts ,sliced
2 garlic cloves
200 g tomatoes ,peeled
1 red pepper and yellow pepper
350 g paella rice
1 litre pints fish stock
salt and pepper
175 g canned sweetcorn
12 large raw prawns ,shelled
lemon wedges , to serve

Method
.Put the saffron threads and water in a bowl and infuse .Cook the prawns in the stock for 12 minutes .

Heat the oil in a paella pan over medium heat. Cook the chicken ,stirring for 5 minutes .Add the onion , garlic, cayenne pepper, paprika and saffron and its soaking liquid and cook , stirring for 1 minute .Add the tomatoes and pepper ,stirring for 2 minutes .

Add the rice and cook stirring for 1 minutes.Add most of the stock ,bring to the boil for 10 minutes or until the rice is almost cooked . Add the seafood and corn and cook for 3 minutes .

When all the liquid has been absorbed ,remove from the heat .Cover with foil and stand for 5 minutes ,Serve topped with egg and garnished with lemon wedges .

Chocolate and Raspberry baked Ricotta Cake

   Ingredients
   Serves 6

3/4 cup Ricotta cheese
2 cups self raising flour
1/4 cup cacao powder
1 cup caster sugar
100 g butter ,melted
1 cup hot water

Raspberry Sauce
1/4 cup caster sugar
1 cup frozen raspberries

Ricotta cheese ensure that this cake is low fat ,while chocolate ensure that it taste fantastic .

Method
1. Preheat oven to 160 degrees C. Grease and line round cake pan with baking powder .
2 . Sift flour and cacao into a bowl . Add sugar , butter , water and ricotta .Mix well . Gently fold through raspberries . Pour mixture into pan . 
3. Bake for 1 hour and 20 minutes or until a skewer inserted into the centre comes out clear .Stand in pan for 5 minutes .Turn onto wire rack to cool .
4. Make raspberry sauce .Combine sugar and 2 tablespoon cold water in a saucepan over medium heat .Cook , stirring for 5 minutes or until syrup thickens slightly .Add raspberries . Remove from heat and set aside for 15 minutes .
5 . Cut cake into wedges . Place on plate .Spoon over raspberry sauce . Serve .
