Yummy Banana Splits with Peanut Brittle


 Bananas, the little fruit that is neatly packed in a bright yellow jacket , can offer you more than just a natural fruit sugar rush for increased energy .
In fact there are many health benefits that can be obtained by eating bananas , just read on to find out more .

- Rich in Potassium 
If you asked most people why eating bananas is good for them , the most common reply would be that they are rich in potassium .

Whilst this is true , it is also important to understand exactly why we need potassium in the first place .

Potassium  is a vital nutrient because it helps to regulate your blood pressure , which is what helps to keep your heart functioning correctly .

Our bones also need this potassium as it helps to reduce calcium excretion , which is how bananas help to reduce the risk of developing osteoporosis and help to keep bones strong the older we get .

- High in Fibre
Fibre is a natural digestive aid that helps to keep your digestive tract in tip top shape and encouraging healthy , regular bowel movements .And as nature would have it , bananas are rich in fibre.In addition , the fibre in bananas can also help relieve the symptoms of heartburn .

-Banana skin for treating problem skin & hair
Banana skin can be used to treat devastating skin problem like psoriasis and acne .If you blend the skin up with some other natural ingredients many people speak of this being a great natural hair masque that can help put back some much needed moisture giving you fresh healthy looking locks again .

Ingredients

200 g dark chocolate ,chopped
11/2 cups thickened cream
4 small bananas , peeled
1 litre vanilla ice cream

Peanut brittle
1/2 cup caster sugar
1/4 cup roughly chopped roasted 
salted peanuts

Method
1 . Make peanut brittle .Line a baking tray with baking paper .Place sugar and 2 tbsp warm water in a saucepan over low heat .Cook for 5 minutes or until sugar has dissolved .Increase heat to medium .Bring to the boil .Cook without stirring for 6 minutes or until deep golden. Remove from heat . Stir in peanuts .Carefully pour mixture onto prepared tray .Stand at room temperature for 1 hour or until set .Break into small pieces .

2 .Place chocolate and half the cream in a heatproof , microwave safe bowl . Microwave on high for 3 minutes ,stirring every 30 seconds with a metal spoon , or until smooth .Set aside to cool for 20 minutes .

3 .Using an electric mixer , beat remaining cream until stiff peaks just form . Spoon into a piping bag fitted with a 1 cm fluted nozzle .

4 . Cut banana in half  length ways . Place in sundae dishes . Top each with 2 scoops ice cream and 2 tablespoons chocolate sauce . Pipe over cream .Sprinkle with brittle .Serve .
