Easy Oatmeal Cookies

    Many foods fall in and out of favor as health trends come and go . Not oatmeal .This whole grain powerhouse as been packing serious nutrition and hearty flavor into breakfast for generation .
    Oatmeal cookies are a proverbial favourite with both kids and adults .This crisp and chewy cookies is loaded with oats , dried fruits and chopped nuts .Try these easy oatmeal dishes .


Serves 6  
Ingredients
A
280 g flour (sifted)
1 tsp baking powder
pinch of salt

B
110 g vegetable shortening
120 g butter
120 g castor sugar

C
1 egg (beaten)
1 tsp vanilla essence

Decoration
some oats to coat
5 red cherries ( cut into small pieces )

Method
1 . Beat ingredients B till light and fluffy . Add in ingredients C and beat well . Fold in mixed ingredients A to form a smooth dough .

2 . Take a teaspoon of the dough and drop it on the oats . Coat well . Roll into balls and decorate with cherries .

3 . Place cookies on greased trays and bake in oven at 180 degrees C for 20 minutes or until golden brown .

Morning Protein Oatmeal


Serves 2

Ingredients
1/3 cup old fashioned oats
2/3 cup water
1 serving vanilla protein powder
1/2 tsp vanilla bean paste
    or extract
1 tbsp natural peanut butter
1 tbsp natural jam/jelly

Method
1 . Combine oats and water in a small saucepan and bring to a boil .

2 .Reduce heat and let oatmeal simmer until 90% of the water is absorbed .

3 .Remove from the heat and whisk in protein powder an vanilla .

4 . Pour oatmeal into a bowl and top with peanut butter and jam/ jelly .
