Vanilla Butter Cookies

This very basic cookie is tasty and so easy to whip together when you want something sweet .These are probably one of my favorite cookies to have , buttery and delicious .I like to bake them so they are still soft inside .But bake them a minute or two longer , and you have more of a sugar cookie with a bit of crunch .

Ingredients
A
75 g unsalted butter
75 g margarine
125 g icing sugar
1 tsp vanilla essence
1 egg 
1 g salt
50 g condensed milk

B
200 g all purpose flour
50 g rice flour
30 g corn flour
3 g baking powder

C
melted chocolate for decoration

Method
1 . Beat ingredients A till fluffy and light .

2 . Sift ingredients B  and fold in lightly till become a dough .

3 . Roll the dough into 3 mm thickness and cut out desired shapes using a cookie cutter .

4 .Place on a greased baking tray and bake at 180 degrees C for approximately 20 minutes .

5 . Let cool completely before dipping ingredients C as decoration .

Cookies tip:
Ingredients and Measuring
-In general , use the ingredients your recipe calls for .If you use margarine instead of butter ,you might find that the cookies turn out thinner than the butter version .If you use all purpose flour instead of cake flour , you'll find that your cookies are denser and fatter .Using sugar substitutes instead of the real thing can also change cookie texture .This isn't to say that you can't experiment , but if you need perfect cookies now ,it's best to stick to the recipe .

-Make sure your ingredients are high quality and fresh .

-Baking soda and baking powder are different .Double check to make sure you're using the ingredient your recipe calls for .
 
-Measure your ingredients properly , whether by weight or by volume .Baking is a science ,chemical reactions are occurring as you mix and bake the ingredients ,so correct ratios are key !

Easy Carob Mousse

Carob is a great source of calcium and is wonderful chocolate alternative .It can be used in a various of dishes .This recipe is sweetened with Agave Nectar , making it a low glycemic dessert option for these watching their blood sugar levels .

Almond Carob Mousse


Ingredients
Serves 4

3 ripe avacado
1/4 cup almond butter
1 cup almond milk
1/4 cup Carob Powder
1/4 cup Amber Agave Nectar 
Pinch of vanilla powder 

Method 
Place all ingredients in a food processor or blender . Place on high speed until very smooth .Refrigerate and drop with chopped fruits and nuts if desired . Enjoy !

Silken Tofu Carob Powder

Ingredients
Serves 4
4 tsp carob powder
4 tsp very hot water 
240 g soft silken tofu
4 tsp rice syrup
4 tsp agave syrup
6 drops pure vanilla essence
freshly ground cinnamon to taste
4 sprigs of mint to garnish

Method
1 . Place the carob in a small bowl , add the hot water and mix well until the carob powder has dissolved .

2. Place the tofu in a medium sized bowl and whisk with electric whisk until it is smooth .

3 . Beat the liquid carob mixture into the tofu , then beat in the rice syrup followed by the agave syrup . Whisk well between each addition .

4 . Add the vanilla essence and cinnamon , whisk just to combine then transfer to glass dishes .

5 . Chill for 30 minutes or up to 2 hours . Serve garnished with a sprig of mint .

Serves 2
Ingredients
2 ripe mangoes 
juice of 1 lime 
100 ml cold water
4 bunches fresh redcurrants 

Method

1 . Cut the cheeks from the sides of the mangoes . Cut these in half and then slide the knife blade under the skin to remove the flesh . Trim as much flesh from the stone as possible and place all of it in the food processor or blender .

2 . Blend until you have a smooth pulp .Add the pulp juice and water and process for a further 15 seconds . 

3 . Turn the puree into a plastic container and place in the freezer .

4 . Every 30 minutes whisk the mixture vigorously with a fork . The sorbet should be ready in 2-3 hours and should appear quite grainy in texture .

5 . Serve in tall stemmed glasses garnished with fresh redcurrants or other fruit .

4 cups mango juice , room temperature
2 cups water
2 limes , juiced
2 inch piece peeled ginger , grated with micro plane
1/2 cup superfine sugar

345 g pack firm silken tofu

3 tbsp agave syrup
rind of 2 lemon plus juice of 2
100 g gram or chickpea flour
2 tsp baking powder
2 tbsp water

Method
1 . Preheat the oven to 170 degrees C .Line a 500 g loaf tin with baking parchment .

2 . Place the tofu , syrup , lemon rind and juice in a mixing bowl and beat with an electric mixer until smooth and light . This will take 5 minutes .

3 . Mix the baking powder and flour together and beat into the tofu 2 tbsp at a time . Whisk with the mixer for a further 5 minutes .

4 . Transfer to the prepared tin and bake for 25-30 minutes until firm but still springy to the touch .Remove from the oven and allow to cool slightly and then lift out with the baking parchment and allow to cool completely .

5 . Serve in slices .

Serve 2
100 g rhubarb ,chopped
1/2 tbsp agave syrup
75 ml cold water

 For the topping
50 g porridge oats
1/2 tbsp millet flour
1 tbsp agave syrup

Method
1 . Place the rhubarb , agave syrup and water in a small pan .Cook over a gentle heat for 15 minutes .Remove from the heat , allow to cook slightly and then transfer to a small pie dish .

2 .Preheat the oven to 180 degrees C .

3 .Place the oats and flour in a mixing bowl and stir well . Then mix in the syrup . The mixture will appear a little lumpy .

4 . Scatter the mixture over the fruit . Do not press the mixture down . 

5 . Transfer to the oven and bake for 15 minutes until the top is crisp .

6 . Remove from the oven and allow to stand for 15 minutes before serving .

Apple Tart Pastry

   Apples deserve to be called " nutrition powerhouses" . They are one of the healthiest foods a person can eat . They are high in fiber and Vitamin C , and they are also low in calories ,have only a trace of sodium , and no fat cholesterol .
    Homemade apple tart - a wining combination of delicate , sweet pastry filled with heavenly scented apples .Simply can't be eaten . To ring in the changes , mix the apples with blackberries or try a mixture of rhubarb and strawberry . To make your tart extra special , add the vanilla pod to your bag of sugar and leave for at least a week before using .


Ingredients
150 g unsalted butter (soften)
60 g icing sugar
140 g plain flour
1 egg 
100 g ground almond

Fillings
150 g unsalted butter
6 green apple (sliced)
75 g raisins
35 g cinnamon powder
20 g sugar (optional)
1 lemon rind, chopped

Method
1 . For pastry , mix the unsalted butter with icing sugar till well combined .Add in plain flour , followed by egg . Mix well , set aside for 15 minutes .

2 . For fillings , cook unsalted butter with sugar till it is dissolved .Add in green apple slices , raisins ,chopped lemon rind and cinnamon powder . Mix well , set aside .

3 . Shape some pastry into tart's mould . Trim well .

4 . Spread the fillings into Pastries .Cover the fillings with some pastry .

5 . Bake in preheated oven at 200 degrees C for 25 to 30 minutes or till it is cooked . Remove and serve .

Easy Peanut Butter Cookies

              Peanut Butter Cookies is an easy and simple meal your whole family is going to love .The peanuts are ground ,and then salt , a sweetener , and sometimes a stabilizer are added (to keep the oil from separating ).Some times it isn't about how pretty the cookies looks !but how good it tastes ! Ingredients
280 g plain flour (sifted)
50 g corn flour (sifted)
1 tsp baking powder (sifted)
150 g butter / margarine
100 g castor sugar
100 g brown sugar
2 tbsp chunky peanut butter
1 tsp vanilla essence
2 egg

Method
Preheat oven to 350 degrees C. Whisk together flour, baking powder and salt in a bowl ,set aside . Beat sugars and butter together in a bowl with a hand mixer until pale and fluffy , about 3 minutes .Add eggs one at a time , beating well after each , until smooth .Add peanut and vanilla ,beat until smooth .Add flour mixture , beat until combined .

Using a tablespoon portion out dough and roll into balls ,place 2 apart on parchment paper -lined baking sheets .Using a fork , press tine over balls in a crosshatch pattern to flattern .Bake , rotating baking sheets halfway through ,cooking until golden brown , about 12 minutes .

Baking cookies tips:
Choose baking sheets wisely : Bake cookies on shiny  , heavy aluminum baking sheets .These sheets with no sides are designed for easily sliding cookies onto a cooling rack .Dark sheets may absorb heat , causing cookies to brown too much on the bottom, nonstick baking sheets work well if not too dark .Insulated baking sheets required a slightly longer baking time .

Know how to grease : Grease baking sheets with cooking spray or solid shortening instead of butter or margarine .Avoid using tub butter or margarine products labeled as spread , reduced calorie , liquid , or soft style .These contain less fat than regular butter or margarine and do not give satisfactory results .

Most cookies recipes call for all purpose flour .For the best results, lightly spoon flour into a dry measuring cup and level with a knife .Do not sift unless the recipe specifically says to do so .

Adjust baking times to achieve the cookie texture you crave .A little less time produces chewier cookies, a little more time makes them crispy .

2 . Stir in nutmeg powder , crushed potato chips and chopped walnuts .

3 . Fold in sifted ingredients and mix well .

4 . Take 1 tsp biscuit mixture and drop onto a greased baking tray . Bake at 180 degrees C for 15 minutes or until golden brown .

Easy Chocolate Chip Cookies


All the good cookie eaters of the world !These cookies are soft , thick , bricks of chocolate chunks and buttery dough baked into a heavy , milk loving cookie that is my most favorite chocolate chip cookie of all time .
These were good and very kid friendly , delicious and chewy , strong enough to hold together in children 's lunches and small enough that you don't feel too guilty sending them to school for a treat .Ingredients
180 g plain flour (sifted)
1 tsp baking powder (sifted)
140 g butter
80 g sugar
1 egg
1 tsp vanilla essence
100 g chocolate chips
70 g chopped walnuts

Method
1 . Cream butter with sugar till fluffy .Add egg and vanilla essence , continue beating . Fold in sifted flour and baking powder .

2 . Mix in chocolate chips and walnuts .

3 . Drop dough with a teaspoon on a greased baking tray .

4 . Bake at 180 degrees C for 15 to 20 minutes .
 Note:
You can certainly make chocolate chip cookies with  a hand or stand mixer .Your cookies will likely spread out more in oven , making the edges crispy and the middles tender .

Cookie dough can be refrigerated for several days before baking .This will actually deepen the caramel flavors in the cookie .Cookie dough can also be frozen for several months .

110 g vegetable shortening
120 g butter
120 g castor sugar

1 egg (beaten)

Decoration
some oats to coat
5 red cherries ( cut into small pieces )

Method
1 . Beat ingredients B till light and fluffy . Add in ingredients C and beat well . Fold in mixed ingredients A to form a smooth dough .

2 . Take a teaspoon of the dough and drop it on the oats . Coat well . Roll into balls and decorate with cherries .

3 . Place cookies on greased trays and bake in oven at 180 degrees C for 20 minutes or until golden brown .

Morning Protein Oatmeal


Serves 2

Ingredients
1/3 cup old fashioned oats
2/3 cup water
1 serving vanilla protein powder
1/2 tsp vanilla bean paste
    or extract
1 tbsp natural peanut butter
1 tbsp natural jam/jelly

Method
1 . Combine oats and water in a small saucepan and bring to a boil .

2 .Reduce heat and let oatmeal simmer until 90% of the water is absorbed .

3 .Remove from the heat and whisk in protein powder an vanilla .

4 . Pour oatmeal into a bowl and top with peanut butter and jam/ jelly .

Easy Butter Milk Cookies

          Cookies have to be everyone favorite.You can't go wrong with a cookie .The smell , the tastes, the appeal it really is the best treat .This recipe for Buttermilk cookies is so soft and flavorful !Old fashioned buttermilk cookies are simple , and are a classic delicious treat . Try it with Chocolate and Raspberry baked Ricotta Cake , strawberry-desserts.


Ingredients
For cookies 
3 cups all purpose flour
1 tbsp grated lemon zest
1/2 tsp baking soda 
1/2 tsp salt
11/2 sticks unsalted butter softened 
2 large eggs
1 tsp pure vanilla extract
2/3 cup well-shake buttermilk

For glaze
11/2 cups confectioners sugar
3 tbsp well - shaken buttermilk
1/2 tsp pure vanilla extract

Method
Make Cookies
Preheat oven to 350 degrees F rack in middle.Butter 2 large baking sheets .

Whisk together flour ,zest,baking soda and salt .

Beat together butter and sugar in a large bowl with an electric mixer until pale and fluffy . Add eggs 1 at a time ,beating well after each addition , then beat in vanilla .Mix in flour mixture and buttermilk already in batches at low speed beginning and ending with flour mixture , until smooth .

Drop level tablespoons of dough about 11/2 inches apart onto baking sheets .Bake 1 sheet at a time ,until cookies are puffed and  edges are golden , 12-15 minutes per batch . Cool cookies on sheets 1 minute , then transfer cookies to racks .

Glaze cookies
Whisk together all glaze ingredients and brush onto tops of warm cookies .

Let stand until cookies are completely cooled and glaze is set .
